Step 2: Slice and prep all other ingredients. When quinoa is cooked, toss it in bowl with the spinach to wilt. Step 3: Add in olive oil, garlic, almonds, red onion, thyme leaves, and salt and pepper, and toss to coat. Step 4: Allow to cool for several minutes and then fold in blackberries. Add feta crumbles before serving. Step 5: To make Blackberry Thyme Infused Olive Oil: Add 3 sprigs fresh thyme and a handful of blackberries to 1 cup of olive oil in a sauce pan. Heat on low for about 10-15 min. and allow it to cool completely. Strain the blackberries out of the oil and store for up to one month.
